What the lab serves
Six distinct programmes run from our Stanley Street bar and roastery. Each is profiled, rested, and dialled before it reaches your cup — whether you sit in for twenty minutes or take beans home for your own brew routine.
Espresso Bar
Our espresso programme centres on two house blends and a rotating single-origin guest slot, each roasted to a development level that balances solubility with sweetness. Baristas dial in dose, yield, and time every morning against our target extraction percentage, adjusting for humidity and bean age. Milk drinks use textured microfoam at a temperature that preserves lactose sweetness without scalding. You can order straight shots, flat whites, cortados, or longer milk formats — all pulled on a commercial dual-boiler machine maintained to manufacturer spec. If you prefer a lighter cup, ask for the guest single; if you want chocolate-forward comfort, the house blend is your anchor.
Filter / Pour-Over
The filter bar runs V60, Kalita Wave, and occasional Chemex service depending on the origin on the board. We grind to order on a flat-burr mill, rinse filters with filtered water, and pour using a staged recipe that matches the roast profile — lighter coffees get a finer grind and higher water temperature; denser naturals get a coarser setting and gentler agitation. Each pour is timed and logged so our team can trace any cup back to its dial-in sheet. Filter service suits guests who want to taste origin character without milk masking delicate notes. Ask the barista which lot is singing best that week; we cup daily and update the recommended brew ratio on the chalk rail.
House Roasts & Retail
Take home the same beans we serve at the bar. Retail bags are stamped with roast date, recommended rest window, and brew suggestions for espresso or filter. We sell 250 g and 1 kg formats, whole bean only, with grind-on-request for guests who travel without a mill. Subscriptions are available for office pantries and home enthusiasts — weekly or fortnightly delivery within Singapore, with profile swaps when a lot sells through. Every bag passes the same QC cupping as our café inventory; nothing is diverted to retail because it failed service standards. Store beans away from heat and sunlight, and note the rest-day guidance on the label before opening.
Cupping & Workshops
Public cupping sessions run on select Saturday mornings and private workshops can be booked for teams of six to fourteen. We follow standard cupping protocol — sample roast, ratio, grind, water temperature, and break times are consistent so you learn to compare origins rather than brewing variables. Workshops cover green grading basics, roast curve reading, and hands-on filter dialing using our lab equipment. Corporate groups use sessions for client entertainment or staff development; we provide cupping spoons, spittoons, and flavour lexicon cards. No prior experience is required, but come curious and ready to smell wet parchment, cracked crust, and cooled liquor across multiple flights.
Light Food & Pastry
Our food programme is deliberately small — a rotating pastry case, savoury toast options, and seasonal fruit that pairs with acidic washed coffees rather than fighting them. Items arrive fresh from partner kitchens each morning and sell through by mid-afternoon; we do not hold overnight stock. The menu board lists major allergens per item, but cross-contact can occur in our compact prep area. If you need a dairy-free or gluten-aware option, speak to the bar team before ordering and we will guide you to the safest choice available that day. Food is meant to complement the cup, not replace a full meal — think croissant with jam beside a Kenya filter, not a three-course lunch.
Café Catering
We cater espresso and filter service for office meetings, product launches, and private events within central Singapore. Catering packages include a bar setup with trained staff, equipment transport, disposables or ceramic service depending on venue, and beans roasted within the rest window for the event date. Minimum lead time is five working days; larger events require a site visit to confirm power and water access. We do not provide BBQ, live fire cooking, or outdoor smoke-producing equipment — our scope is specialty coffee service only. Quotes are based on guest count, duration, milk options, and whether you want a cupping segment included. Contact us with your date, venue, and expected headcount to receive a scoped proposal.
Food and allergen advisory: Our kitchen handles wheat, dairy, eggs, tree nuts, soy, and sesame. Menu items may contain traces of allergens not declared on the board. Please tell our bar team about dietary needs before ordering; we cannot promise a fully allergen-free preparation space.
